SORT and OC SORT Trackers in Workflows

Workflows now includes dedicated blocks for SORT and OC-SORT trackers, powered by the Trackers 2.3 package. SORT is optimized for real-time pipelines with minimal occlusion, while OC-SORT handles heavy occlusion and non-linear motion.
